My first rotation was at St. Camillus, along term care and rehabilitation center for 5 weeks. While at St. Camillus I learned how to complete nutrition screens and assessments. I expanded my knowledge on different disease states and corresponding biochemical lab values. I was able to work closely with other health care professionals daily. I also saw a swallow evaluation, and a venous stasis ulcer first hand. In addition to completing nutrition assessments and talking with patients I completed a wellness board for the employees. One of the goals at St. Camillus is to utilize the Dietitians not only for the clinical aspect but also employee wellness and this is one way they try to do that. Below is a photo of the wellness board that I created, samples of some assessments that I completed and my patient management report.

At The Food Bank of CNY I created a variety of materials for clients participanting in the member programs. The Food Bank of CNY distributes nutritious food to food pantries and soup kitchens throughout 11 surrounding counties. I helped analyze food pantry packages to make sure that they were adequate and contained the recommended amount of food from each food group. I also created a 5 and 7 day food pantry package guide in which pantries can elect to follow and allow their guests to "shop" in the food pantry as they do in a grocery store.  I also presented food safety training for member programs to learn about the importantance of food safety to keep themselves and their guests safe. Participants often requested recipes for items that they commonly receive in their food pantry therefore I also created many recipes to be distributed to guests.

The Food Bank also conducts Just Say Yes to Fruits and Vegetables education lessons. So I was able to learn how to deliver a lesson plan and delivered one on my last week there from start to finish.

Acute Care
Food Management

I spent 9 weeks with the Dietitian and Food Service Director at Oswego Hospital. Here I learned more about doing nutrition assessment in acute care as well as outpatient nutrition counseling. I was able to improve the process flow on how the Dietitian gets recommendations to the Doctors to improve the nutritional status of patients. I was also able to help the Dieitian work with the IT department on revising the nutrition assessment forms to be imputted into the EMR system. 

I spent 6 weeks with the Food Service Director at CNS school district. Here I was able to update the food service website with menus and interactive tabs for the students to use. I also researched available grants that could help fund projects that the district was working on. I created a carbohydrate counting list for St Rose of Lima elementary school to be used by the nursing staff to better assist their students with type 1 diabetes by analyzing food labels and recipes.
